  3. 1 litro chicha o cerveza
  4. 6 cucharadas sal
  5. 2 cucharadas pimienta molida

  8. 2 tazas jugo de naranja agria
  9. 1 tomate grande maduro sin piel y sin semillas picado

  1. Con la ayuda de un cuchillo fino, haga incisiones profundas y abra la pierna sin dañar su forma.
  2. Mezcle en un plato la sal, la pimienta y el comino, y frote con estos aliños toda la pierna.
  3. Introduzca los dedos en los orificios que hizo con el cuchillo y unte las paredes internas con el aliño.
    Repita esta operación utilizando los ajos machacados.
  4. Deje la pierna en el refrigerador durante 24 horas cubriéndola con papel film.
    Al cabo de ese tiempo agregue un litro de chicha o de cerveza y vuelva a ponerla en el refrigerador durante 2 días más, voltee cada 3 horas para que tenga contacto con el líquido por todos sus lados.
  5. Precaliente el horno a 200 ºC (400 ºF) y hornee la pierna con todo su jugo de 20 a 30 minutos, hasta que se concentre el sabor de los aliños.
  6. Saque del horno y bañe con aceite o manteca de color.
    Introduzca el achiote también en los orificios que abrió con el cuchillo.
  7. Lleve nuevamente al horno y hace volteando varias veces, hasta que esté bien cocida y dorada.
    Generalmente la cocción demora 2 horas.
  8. Este plato tan tradicional se sirve con el agrio, para el cual mezcle todos los ingredientes indicados. Y se acompaña con varias guarniciones como llapingachos, mote, aguacate y lechuga. Buen Provecho!
